Smoked Braised Pork Belly
Tender, smoky, and full of flavour – this Smoked Braised Pork Belly is a great meal for slow evenings and casual entertaining. - 1kg (2 Packs) Chop Online Meats Pork Belly Pieces
- 1 tbsp Chinese five spice
- Salt & pepper, to taste
- 1 cup Shaoxing rice wine
- Hot water, enough to barely cover the pork
- ¼ cup light soy sauce
- 1 tbsp dark soy sauce
- 3–4 slices fresh ginger
- 3–4 garlic cloves, peeled
- 1 star anise
- 2 bay leaves
- 1–2 tbsp rock sugar (or regular sugar)
Method
1. Season the pork – Coat the pork belly pieces with Chinese five spice, salt, and pepper.
2. Smoke the pork – Place the pork belly on your smoker and smoke for about 1 hour, until lightly bronzed and fragrant.
3. Prepare the braise – In a heavy pot or Dutch oven, add the Shaoxing rice wine, light soy sauce, dark soy sauce, ginger, garlic, star anise, bay leaves, and sugar. Add the smoked pork belly, then pour in hot water until the meat is just covered.
4. Braise – Bring to a simmer, then cover and cook gently for 1.5 hours, until the pork belly is tender and infused with the rich, aromatic broth.
5. Finish & serve – Remove the bay leaves and star anise. Serve the pork belly with steamed rice or noodles, spooning over some of the braising liquid.
