Jalapeno & Berry Ham Glaze
Want to make your Bone In Ham unforgettable? Try this easy Jalapeno & Berry Glaze — a bold mix of heat and sweetness that adds a gourmet twist to your roast.

- 1/2 cup sliced jalapeño (fresh or pickled)
- 500g blackberries (fresh or frozen - I used frozen)
- 3/4 cup brown sugar
- 3/4 cup water
- 1/2 cup orange juice
- 2-3 cloves of minced garlic
- 1/4 cup of whiskey (I used Jack Daniels)
- 1/2 tsp whole clove

Method
1. Combine all ingredients in a small saucepan and bring to a boil over medium heat for 5 - 7 minutes, then lower the heat and allow the mixture to simmer, uncovered, until it has reduced and thickened to a glaze consistency, 10-15 minutes.
2. You will then need to break down the berries using a masher or a fork to separate them - alternatively, if you prefer to remove the seeds and bits, you can use a sieve to strain the glaze.

It's best to apply the glaze towards the end of the cook, at a lower temperature to prevent the sugar from darkening too fast.
