Jalapeno & berry ham glaze

 

Make your ham one of a kind with this amazing glaze recipe and wow all your guests! 

 

 

1/2 cup sliced jalapeño (fresh or pickled)

500g blackberries (fresh or frozen - I used frozen)

3/4 cup brown sugar

3/4 cup water 

1/2 cup orange juice

2-3 cloves of minced garlic

1/4 cup of whiskey (I used Jack Daniels)

1/2 tsp whole clove

 

*Combine all ingredients in a small saucepan and bring to a boil over medium heat for 5 - 7 minutes, then lower the heat and allow the mixture to simmer, uncovered, until it has reduced and thickened to a glaze consistency, 10-15 minutes.

 

*You will then need to break down the berries using a masher or a fork to separate them - alternatively, if you prefer to remove the seeds and bits, you can use a sieve to strain the glaze. 

 

*(It's best to apply the glaze towards the end of the cook, at a lower temperature to prevent the sugar from darkening too fast)
