Beef Short Ribs in Tomato, Garlic & Red Wine

Ingredients
- 1 x whole NZ Grass Fed Beef Short Rib (4 ribs)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp olive oil
Sauce
- 1 litre tomato pasta sauce
- 1 cup water
- 1/2 cup red wine
- 6 x fresh garlic cloves crushed
- 2 x brown onions finely chopped
- 1 tsp salt
- 1 tsp pepper
- 1 tsp dried oregano
- 3-4 twigs fresh thyme
Method
1. Pre heat oven to 150 degrees Celsius
2. Remove short ribs from fridge 1 hour before cooking. Slice between the bone to get 4 individual short ribs then season with olive oil, salt & pepper
3. Place the short ribs in a dish and cook for 45 minutes
4. Combine all sauce ingredients in a casserole
5. Remove short ribs from the oven and place in the casserole dish, put the lid on and cook the short ribs for 4 hours at 135 degrees Celsius
6. Remove the casserole pot from the oven and rest for 10-15 minutes with the lid off before serving
