Beef Brisket Burnt Ends with Pineapple & BBQ Sauce

Makes 1kg of beef brisket burnt end pieces
Sauce ingredients (Combine & heat on low for 5-10 mins while stirring)
- 1/2 cup pineapple juice
- 2 cups your Favourite BBQ Sauce
- 2 TBSP brown sugar
- 100g unsalted butter
- 1kg NZ Diced Beef Brisket Pieces
Method
1. Season your brisket pieces with your favourite BBQ rub or salt & pepper (Chop recommends Texan SPG Rub)
2. Preheat your BBQ to 140 degrees Celsius with one piece of fruit wood (optional)
If using a conventional oven then heat on fan bake at the same temperature.
3. Cook your beef brisket pieces for 45 minutes in an open tray
4. Remove tray from BBQ/oven, add your BBQ sauce and wrap the tray with tinfoil before cooking for a further 3 hours at the same temperature
5. Remove and rest for 15 minutes before serving
