How to Make Crispy Chicken Snack Burgers
Step 1: Prepare the chicken
Remove the bones from the chicken thigh cutlets, taking care to remove any small bone fragments. Place the boneless chicken between two sheets of baking paper or inside a food-safe zip-lock bag and gently tenderise until the pieces are an even thickness.
This helps the chicken cook more evenly and makes it easier to assemble your burgers.
Step 2: Set up your crumbing station
Prepare three separate bowls:
- Bowl 1: Add the flour.
- Bowl 2: Whisk together the egg and milk to create your egg wash.
- Bowl 3: Add the breadcrumbs of your choice.
Having everything ready before you start makes the crumbing process quick and easy.
Step 3: Coat the chicken
Take each piece of chicken and coat it thoroughly in the flour, shaking off any excess. Next, dip it into the egg wash, allowing any excess to drip away. Finally, press the chicken into the breadcrumbs until it's evenly coated on all sides.
For an extra-crispy finish, make sure the breadcrumbs adhere well to the chicken before cooking.
Step 4: Cook until golden and crispy
Preheat your air fryer or oven to 180°C.
Place the crumbed chicken in your air fryer basket or on a lined baking tray, leaving space between the pieces so the hot air can circulate.
Cook for approximately 25 minutes, turning halfway through if needed, until the coating is golden and crispy and the chicken is cooked through.
Cooking times can vary depending on the thickness of the chicken and your appliance. Always check that the thickest part of the chicken reaches an internal temperature of 75°C before serving.
Step 5: Make the homemade burger sauce
While the chicken is cooking, grab a small bowl and combine the whole egg mayonnaise, American mustard and pickle juice.
Mix until smooth and creamy. The mayonnaise gives the sauce its rich texture, the mustard adds a little sharpness, and the pickle juice brings a tangy flavour that pairs perfectly with crispy chicken.
Taste and adjust the ingredients to suit your preference. Add a little extra pickle juice for more tang or mustard for a stronger flavour.
Step 6: Prepare your burger toppings
Finely slice the green cabbage and prepare your pickles. If you like your brioche buns warm, lightly toast the cut sides in a pan or oven for a minute or two.
Toasting the buns adds a little texture and helps them hold up against the sauce and juicy chicken.
Step 7: Assemble your crispy chicken snack burgers
Now comes the best part!
Spread a generous amount of homemade burger sauce over the brioche buns. Add a layer of finely sliced cabbage, followed by your crispy crumbed chicken.
Top with a slice of Swiss or cheddar cheese and your favourite pickles. Finish with a little extra burger sauce, place the top bun on and get ready to enjoy.
Serve immediately while the chicken is hot and crispy
